- It’s 100 grams of sunflower spread / butter.
- You need 100 grams of sugar, white or brown.
- You need 2 of medium over ripe bananas, well mashed.
- It’s 3 tbsp of milk of choice – gluten free flour will need a little extra.
- You need 100 grams of plain / gluten-free flour.
- Prepare 2 tsp of ground cinnamon.
- You need 3/4 tsp of baking powder.
- You need 1/2 tsp of baking soda / bicarb.
Vickys Quick Microwave Banana Cake, GF DF EF SF NF instructions
- Put the butter into a microwave safe glass dish or bowl, litre sized, and heat on high until melted, 30 seconds or so.
- Mix the milk, sugar and mashed bananas into the melted butter, then mix in the flour, cinnamon, baking powder and soda.
- Heat on high (my microwave is 800W) for 8 – 10 minutes or until risen and cooked right through. It'll pull away from the sides of the bowl when done.
- Serve immediately with custard, ice cream or caramel sauce.
